This is a complex orgeat whose full almond character imbues cocktails with divine flavor and aroma.

We start with whole almonds that are blanched and roasted to bring out deep toasted nut flavors. Also in the mix: cane sugar, orange blossom and a touch of bitter almond oil for a distinct marzipan note. Use this orgeat to shake up a world-class Mai Tai!

The California almonds we use in our orgeat are harvested every year between August and October. When the almonds reach maturity on the tree, a machine shakes them to the ground where they are left to dry in the sun for 8-10 days before being picked up and sorted. Our almonds are then custom roasted, ground smooth, and turned into the world’s best orgeat.

We All Fall Down Thanks to Almond Orgeat Syrup!

So for the holidays we decided to try the Liber and Co. recipe of 'We All Fall Down'. (3/4 oz Almond Orgeat Syrup, 1 1/2 oz Brandy, 3/4 oz St. George Spiced Pear Liqueur, and 3/4 oz lemon juice. WE AND ALL OUR FRIENDS LOVED IT!

That said, we did tweak it a little to better fit our tastes: 1 oz Almond Orgeat Syrup, 2 oz Brandy, 1 oz St. George Spiced Pear Liqueur, and 1 oz Myer Lemon juice (freshly squeezed. Myer lemons are a cross between a lemon and an orange and are great in cocktails!) rather than strain, we mix with ice and a spoon in a mixing vessel and serve with a clear spherical ice cube and freshly grated nutmeg.

We have also added all the ingredients to a shaker along with one egg white. Dry shake hard for one minute, add ice and shake again for one minute. strain into a coupe, grate a little dark orange chocolate on top! We like this method just as well for this recipe, so its truly your preference.

Without the high quality syrups from Lieber, I would not have the bartending reputation that I do with all my friends! I also like the new and improved bottles; looks nicer and much easier to pour!

Orgeat is the backbone of mai tais - a favorite of friends and family. Liber & Co's Almond Orgeat Syrup has a a rich silky texture and a clean almond taste. Other bottled orgeats I've tried dilute or overpower the almond with adjunct flavors. Liber & Co's orgeat is more convenient and more consistent than homemade, too. It is precisely what I was looking for and made our mai tais outstanding.
