Polynesian 75

A tiki-fied version of the classic gin and champagne cocktail.

Ingredients:

• ½ oz Tropical Passionfruit Syrup
• 1 oz gin
• ½ oz lemon juice
• 1 dash tiki bitters
• 3 oz chilled sparkling wine

Instructions:

• Add all ingredients except wine to a cocktail shaker
• Add ice and shake hard for 10 seconds
• Strain into a chilled champagne flute and top with the sparkling wine

Glass:

• champagne flute

Garnish:

• lemon peel
