Pineapple Julep

Jerry Thomas' Pineapple Julep, but with a cobbler-like twist, from Drink.Well in Austin, TX.

Ingredients: 

• ½ oz Pineapple Gum Syrup
• ¼ oz Raspberry Gum Syrup
• 1 ½ oz Genever
  
• 1 oz sparkling wine
• 1 lemon wedge
  
• 1 orange wedge

Instructions:

• Add all ingredients to a cocktail shaker
• Add ice and shake hard for 10 seconds
• Strain into a julep tin and top with crushed ice

Glass:

• julep tin
  

Garnish:

• mint, pineapple wedge and raspberries
