Sitting Pretty
A lush highball that pairs creamy toasted coconut with effervescent grapefruit. Mint and rum gives this one some refreshing mojito vibes. Adapted from Demi Natoli's original recipe.
Ingredients:
- ½ oz Toasted Coconut Syrup
- ½ oz Rio Red Grapefruit Cordial
- 2 oz light rum (Plantation 3 Stars recommended)

½ oz lime juice
- 3 oz club soda
- 5-6 leaves of mint
Instructions:
- Add all ingredients except club soda to a cocktail shaker
- Fill with ice and short shake for 5 seconds
- Strain into a highball filled with ice
- Top with club soda
