Sitting Pretty

A lush highball that pairs creamy toasted coconut with effervescent grapefruit. Mint and rum gives this one some refreshing mojito vibes. Adapted from Demi Natoli's original recipe.

Ingredients:

• ½ oz Toasted Coconut Syrup
• ½ oz Rio Red Grapefruit Cordial
  
• 2 oz light rum (Plantation 3 Stars recommended)
  
• ½ oz lime juice
  
• 3 oz club soda
• 5-6 leaves of mint

Instructions:

• Add all ingredients except club soda to a cocktail shaker
• Fill with ice and short shake for 5 seconds
• Strain into a highball filled with ice
• Top with club soda
