Cocktail by @carolinaverbena. I love fresh pineapple and eat as many of them as I can in the summer. But I hate how much waste there is when you peel them. So I poured the last of my bottle of mezcal into a large jar, filled it up with fresh pineapple rind, and let it sit for a week. The result? Pineapple heaven. Smoky, sweet, tropical. It was exactly what I had in mind for this easy mezcal pineapple sip

Ingredients:

  • 1 oz Pineapple Gum Syrup
  • 2 ½ oz mezcal, pineapple rind infused if desired
  • 1 oz fresh lime juice

Instructions:

  • Add all ingredients to cocktail shaker with ice
  • Shake for 10 seconds
  • Strain into a glass over large ice

Glass:

  • rocks

Garnish:

  • pineapple leaf
