HP Pineapple Highball
A beautiful tiki-ish cocktail that utilizes single malt scotch as a base spirit. Scotch and pineapple are a match made in heaven!
Ingredients:

¾ oz Pineapple Gum Syrup

2 oz Highland Park 12 y/o
- ½ oz Amaro Montenegro
- ¾ oz lemon juice
- 1 dash tiki bitters
- 1-2 oz club soda
Instructions:
- Add all ingredients except soda to a cocktail shaker
- Add ice and shake hard for 10 seconds
- Strain over ice in a highball glass
- Top with club soda
