Gato Del Sol
This cocktail is an original by Dustin Popp that he created for a challenge: make the best bachelorette party cocktail. We thought this cocktail sounded wonderful and made our own riff by adding ½ oz of our Grapefruit Cordial and reducing the honey syrup from 1 oz to ½ oz.
This is a very refreshing cocktail and a wonderful pairing between the smokey mezcal and the grapefruit juice. Named after the Kentucky Derby winner from 1982, Gato Del Sol!
Ingredients:
- ½ oz Rio Red Grapefruit Cordial
- 1 ½ oz mezcal
- ½ oz grapefruit juice
- ½ oz honey syrup (5:2 ratio)
- 2 dashes Agnostura bitters
- 3-4 oz soda water
Instructions:
- Add everything but the soda water to a cocktail shaker
- Add ice and shake hard for 10 seconds
- Strain over ice in a highball glass
