Waipio Beach

The Big Island's Waipio Beach isn't easy to get to, let alone surf. For now, conjure its black sands and sick curls with this evocative, elegant namesake.

Ingredients:

• ¼ oz Pineapple Gum Syrup
• 2 oz vodka
• ¼ oz blue curacao
  

• ¾ oz lemon juice
  

• egg white
• black lava salt
  

Instructions:

• Add all wet ingredients to a cocktail shaker
• Add ice and shake hard for 20 seconds
• Strain into a chilled coupe lined with black salt
