French Pearl
Fresh, delicious, and complex, this strong Southside riff is an interesting one to try with different gins. From Aubrey Saunders at the Pegu Club.
Ingredients:
- ¾ oz Classic Gum Syrup
- 2 oz gin

¼ oz absinthe

1 oz fresh lime juice
- 5 mint leaves
Instructions:
- Muddle mint and syrup in a cocktail shaker
- Add remaining ingredients with ice and shake hard for 10 seconds
- Strain into a chilled coupe glass
- garnish with fresh mint and a lime wheel
