Mai Tai IPA
Like with Campari in the Bitter Mai Tai, this classic tiki cocktail does well with the addition of a citrusy-bitter ingredient. Here, reach for a bright, medium-bitter IPA to lengthen this drink into carbonated and slightly hoppy delight.
Ingredients:
- ½ oz Almond Orgeat Syrup
- ¼ oz Demerara Gum Syrup
- 1 oz aged rum

½ oz Jamaican rum (Smith & Cross recommended)

½ oz orange liqueur
- 2 oz IPA

¾ oz fresh lime juice
Instructions:
- Add all ingredients except for IPA to a cocktail shaker
- Add ice and shake hard for 10 seconds
- Strain into a chilled highball glass
- Top with IPA
- Garnish with an umbrella
