Blue Grotto
Adrift in the Mediterranean, you'd find pineapples in Israel, limes in Turkey, bergamot in southern Italy, and celery in Spain. Planted at home, this breezy vodka tonic riff is a delicious way to bring those faraway flavors to your glass. From Isaac Acosta.
Ingredients:

½ oz Pineapple Gum Syrup
- 1 ½ oz vodka

¾ oz lime juice

½ bergamot liqueur
- 2 dashes celery bitters
- 2 oz Fever Tree Mediterranean Tonic
Instructions:
- Add all ingredients except tonic to a cocktail shaker
- Add ice and shake hard for 20 seconds
- Strain into a highball glass over ice
- Top with tonic and stir

- lime wedge or wheel, fresh mint or mint marigold
