Amargo Agrio

This one's for those who find bitter, sour cocktails to be delightful. From Oakland's Stew Ellington.

Ingredients:

• ½ oz Tropical Passionfruit Syrup
• 2 oz amaro (Amargo-Vallet strongly encouraged)
• ¾ oz lime juice
• egg white

Instructions:

• Add all ingredients to a cocktail shaker
• Add ice and shake hard for 20 seconds
• Strain into a chilled coupe glass
